High-protein nut and seed bars

A high-protein, vegetarian, delicious nut and seed bar, ideal for a healthy snack whenever you feel like you need a treat.I eat at least 6 times a day and very often it is hard to find a healthy snack in a shop. Most bars are either too rich in sugar, contain oats and other carbs and a low protein intake. But most importantly, they don’t taste that good, so I would eat them for hunger but not for the flavour really.
So I tried to make my own nut bars from some online recipes and then started experimenting my own versions, until I came up with this recipe, which is absolutely my favourite. Nut and seed protein bars It is extremely easy, it is healthy, vegetarian, high in proteins, no sugar added and it tastes fantastic! The nuts and seeds are an excellent source of good fats and proteins. Nut and seed protein barsHoney nut barThe cranberries and the banana add the sweetness and the honey bonds everything together. And the result is delicious!

Nut and seed protein barsIngredients:
200g chopped hazelnuts, 150g sunflower and pumpkin seeds, 50g dry cranberries, 4 tablespoons of dry coconut flakes, 5 tablespoons of honey, 1 banana.
Preparation:
Blend the banana and the honey until you obtain a creamy, thick smoothie.  In a bowl, mix the seeds, the chopped nuts, the cranberries and the coconut flakes using your hands. Add the smoothie of yogurt and honey and mix with a tablespoon until completely amalgamated.
Place a sheet of baking foil on an oven tray. Pour the mix you have created and use your hands to spread it until obtaining an even thickness of approximately 1.5cm (half inch).
Bake in the oven for 2 hours at 120C – the low heat will dry the banana and make the bars stick together. Once cooked, take the tray out of the oven and let the mix cool down. When cold, cut the mix in squares or stripes, or in the shape you prefer.  Your seed and nut bars are ready!
Enjoy them fresh but, if you think you have prepared too many, then you can freeze them and use them whenever you like.Nut and seed protein bars
